Recipe: Cherry tomato pasta with Burrata
Easy Italian Pasta Recipe | Burrata & Cherry Tomatoes
Known for its simplicity, this dish is one of the best pairings with wine. The recipe is quick and unfussy but delivers beautiful flavour, especially alongside a chilled glass of Fiano or Negroamaro. Perfect for when you want something easy yet delicious.
You can use any pasta you like. We’ve chosen casarecce, but fettuccine works wonderfully too.
Ingredients
Cherry tomatoes (1 tub)
Fresh basil (a handful of leaves)
Garlic (4 cloves, minced)
Pasta – fettuccine or casarecce
Burrata (1 ball)
Olive oil (1 tbsp)
Salt & pepper
Method
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté until golden.
- Add the cherry tomatoes, basil, and a generous pinch of salt and pepper. Let the sauce cook gently, stirring occasionally, until the tomatoes soften and release their juices.
- Meanwhile, cook your pasta in salted boiling water until al dente (around 10 minutes).
- Drain the pasta and return it to the pot. Pour in the tomato sauce and toss gently until well combined.
- Transfer to serving bowls, top with the burrata, and let it melt slightly into the warm pasta. Finish with fresh basil and an extra pinch of salt and pepper.
- Take your chilled Fiano cans out of the fridge or your Negroamaro out from the cupboard and serve with your dinner
